Braised Short Rib Tacos with Blackberry Salsa
Ingredients (Serves 4):
For the short ribs:
2 lbs beef short ribs
Salt and pepper
1 tablespoon olive oil
1 onion, diced
3 garlic cloves, minced
1 cup beef broth
1 cup Dock’s Red
2 tablespoons tomato paste
1 teaspoon smoked paprika
For the blackberry salsa:
1 cup fresh blackberries, chopped
1 jalapeño, finely diced
1/4 cup red onion, diced
Juice of 1 lime
1 tablespoon honey
2 tablespoons chopped cilantro
For assembly:
Small corn tortillas
Crumbled queso fresco
Extra cilantro for garnish
Instructions:
Preheat your oven to 300°F.
Season the short ribs generously with salt and pepper.
Heat olive oil in a Dutch oven over medium-high heat.
Sear the short ribs on all sides until browned, then remove and set aside.
Lower the heat and add onion and garlic to the pot.
Sauté until fragrant, then stir in the tomato paste and smoked paprika.
